			<content:encoded><![CDATA[<p>I&#8217;ve been visiting <a href="http://www.merivale.com/#/ivy/uccello">Uccello</a> for various lunches on weekdays &#8211; buzzing as the new corporate lunch destination in the city. It is very refreshing to find the place on a Sunday much more pleasant and relaxed, and without the company of clients, I can actually reveal my secret: my love for food porn. Other dishes from the Uccello menu can be found in my previous post <a href="http://weblog.xanga.com/Amuse_Bouche/668097223/la-cucina-romana.html">here</a>, where I learnt how to cook traditional Roman cuisine with Head Chef Massimo Bianchi.</p>

They had debated for weeks whether to put this on the menu as it might be &#8220;too simple&#8221; of a dish. But alas, the simple things are always the best, and what better than his mama&#8217;s recipe. His exact words were <em>&#8220;If they don&#8217;t like it, they can f*ck themselves&#8221;.</em> And that&#8217;s why I love him!</p>

<p align="left">My other highly recommended dish (I always order on the corporate card) is the Bistecchina &#8211; Seared fillet of beef medallions with wild rocket leaves, shaved Reggiano and lemon dressing.</p>
<p align="left">And who can forget our favorite part of the meal? Dolce!</p>

<p>CIRA (<span style="font-style: italic;">The Council Of Italian Restaurants In Australia</span>) was started by 12 Italian-Australian restaurateurs for cultural and educational purposes, to promote the values of Italian food in Australia. Fortunately for us, CIRA has a cooking school with the best Italian chefs offering courses to the general public and specialized courses for students and the industry.<br />

Massimo (ex Buon Ricordo, and about to open Uccello at Ivy) gave a very personal cooking course at the kitchen of Casa Barilla, next to a long communal dining table. The format was perfect &#8211; we learn one course, we sit down and enjoy it with wine, and then we move onto the next. One of the founding members Armando Percuoco (<span style="font-style: italic;">Buon Ricordo</span>) was also there to offer his advice on truly authentic Italian cooking.</p>
<p><strong>Fettuccine with prosciutto, pomodorini and pecorino<br />
</strong><img src="http://x84.xanga.com/0dcc915477233202812890/s157398993.jpg" alt="CIRA" /><br />
There is a common misconception that pasta can be cooked as soon as the water starts to boil. The water has to be violently boiling &#8211; and you can heavily salt it, not just a pinch, but enough so you can actually taste the salt in the water. Drain the pasta about a minute or two less than the packet instructions (if you taste it, it&#8217;s still slightly raw in the middle) because when you pour it back into the pan with sauce, it will keep cooking. Save a cup of the pasta water (as it is &#8220;starchier&#8221; than normal water) for the sauce later if it becomes too dry. But in Rome, the sauce can never be watery, it has to stick to the pasta and be as dry as possible.</p>
<p><strong>Scottadito d&#8217;abbacchio alla Romana</strong> (Scottadito means &#8216;by the finger&#8217;; d&#8217;abbacchio is young lamb &#8211; lamb chops you can eat with your fingers)<br />

True Italian cooking only requires you to slightly crush garlic bulbs with your palms. Brown them in olive oil until they&#8217;re almost burnt (dark brown) and remove them from the oil. There is no need to chop it up as the flavour in the oil is enough. Garlic that is cooked through also makes the food taste less heavy, compared to say, French food. The same goes for the Rosemary &#8211; put the entire sprig in the pan, cook, and then remove. Keep the pan at high heat at all times so the lamb doesn&#8217;t end up broiled.<br />

When the lamb chops are ready, the remaining fat can be made into a beautiful creamy sauce (without the help of cream or butter) by reducing with some anchovies, wine and vinegar.</p>
<p><strong>La Ricotta</strong><br />

Ricotta cheese &#8211; made into a pattie, dusted with flour, covered in egg wash and deep fried in Strutto/sugna (pure pig&#8217;s fat) until golden brown. Dusted with cinnamon and sugar, cholesterol never tasted so good. Served warm.<br />

This is truly sinful - but it tastes somewhat light.</p>

			<content:encoded><![CDATA[<p>After working at the Ivy for months I have actually never visited <a href="http://merivale.com/ivy/madcow" target="_new">Mad Cow</a> for a decent meal. What a great business lunch destination! Everything in very tongue-in-cheek on the menus and the atmosphere is cheerful, casual and happy. Due to time constraints, we dug straight into the main course of the steaks with two bottles of J.J. Hahn Cabernet Sauvignon, just so we can leave room, and time, for desserts (because baby, that&#8217;s just how we roll). The service was swift and friendly &#8211; especially with our Zoolander-esqe waiter Mikee Collins&#8230; what more could you want from a <strike>quickie</strike> business lunch?</p>
<p>The steaks were all cooked to each person&#8217;s specification, as there were no complaints from anyone. There were Wagyu options (both marble score 7 and marble score 9), but I honestly have tired myself from eating wagyu &#8211; it&#8217;s great once in a while, but just really not very healthy for the heart to consume an excessive amount of fat. For dessert, I really enjoyed the &#8216;Five textures of Mandarin&#8217; from the crispy pastry shell, to the ice cream, to the jelly, the coulis, and the syrupped segments with sweet fragrant citrus undertones.</p>

<p style="text-align: left">I work mostly Friday and Saturday nights. There is also a &#8220;late night noodle&#8221; menu from 11pm ~ 2am so that you can satisfy your hunger&#8230; and then continue drinking! Reminiscent of those drunken nights in Tokyo where you almost always end up somewhere with a hot bowl of ramen to alleviate intoxication. Gold.</p>

<p>I returned to Sydney plenty more relaxed, rested and happy. Another quiet one coming up for new years eve as well. Fortunately, The Ivy doesn&#8217;t open til Jan 8th, due to multiple complications &#8211; hence my sudden unplanned holiday. Happy New Year everyone!</p>

<p>In December the Merivale Group CEO Justin Hemmes will open his new pleasure precinct called Ivy &#8211; $150 million worth of bars, restaurants, pools, nightclubs, retail and ultra-exclusive hotel suites covering three city office blocks in the Sydney CBD.</p>
<p>The Ivy will have a pool surrounded by outdoor bars, a couple of nightclubs, a day spa, ballroom for 1000, teppanyaki grill, sushi train, burger bar, wine bar and deli, Italian restaurant and more bars. The entire ground floor will be retail outlets and two laneways will divide two buildings.</p>
<p>Two purpose-built party penthouses will occupy the top and penultimate floors of the five-storey building at 320 George Street. Each will be 350sq m, with staffed cocktail bars, a pool, spa, lounge room, dining area, bathrooms and bedroom &#8211; all for a cool $4000 to $5000 a night.</p>
<p>Being Asian I have been typecasted to work in the Japanese restaurant wearing a [slutty] kimono styled dress of some sort. Perhaps I can pretend to be Japanese at the same time, since most customers think I&#8217;m from Japan anyway!</p>
<p>I was serving Tara Reid and didn&#8217;t even know it &#8211; I mentioned to someone that the &#8216;old woman&#8217; I was serving looked strangely like a very old version of Tara, only to find out that it WAS Tara. <a target="_new" href="http://thesuperficial.com/2007/12/tara_reid_looks_like_my_grandm.php">Check out this photo of her arriving at Sydney Airport</a>! Makes you think twice before you party til dawn.</p>
