Shank you

This was something pulled together for once again – an empty fridge. I received a fruits only basket weeks ago and realised there was a lonely (almost rotten) blood orange rolling around the back of my crisper.

2 x lamb shanks – (some) fat removed
slices of blood orange
Rosemary
2 large cloves of garlic – thinly sliced
Handful of olives, pitted and sliced.
Baking paper and cotton string
 
This is so easy! Place a slice of blood orange on each side of the shank, sprinkle garlic, olives and rosemary (leaves only) on top.
Wrap up with TWO layers of baking paper, with bone exposed on top. Secure tightly with string.
Throw in fan-forced oven at 150C for 3 hours, or until meat falls off bone.

When you unwrap the paper, it’s moist, juicy, and soooo tender. If only I had potatoes – I would use the leftover jus to make a gravy. Or maybe serve it with polenta or rissini, and a mean glass of Shiraz.

Don’t make this afterwork on a weeknight – or you won’t get to eat dinner until 9:30pm!

    Yeah, I remember times when I had to eat late b/c I was trying to cook things in the oven.  :/

    hahaha.  i’m not sure if it’d cover a visa.  send me your resume.  i must warn you though i’d think you’d be well overqualified for this type of work.
