Dumplings

Since I’ve taken a 10 week break from working at a restaurant, I can finally stay home at nights or weekends to teach myself a few more authentic Chinese dishes. Mom being a very strict Buddhist vegetarian I’ve always wanted to perfect a dish that she can enjoy.

I’m looking for a good, tried and tested 花素餃 (vegetarian dumping) recipe… can anyone help?
It cannot contain meat, fish, egg, garlic, or anything in the onion family (shallots, chives, 韭菜 etc).

    my aunt doesn’t eat meat either.. i don’t know exaaactly what she puts in her dumplings, but i do know for a fact that her base is made out of many different kinds of mushrooms(oyster, enoki, wood ear, shiitake, snow fungus etc..), bamboo shoots, and bean sprouts. THEEEN she puts a lot of ginger in it.. S’ALL I KNOW !

    is garlic and onion not considered vegetarian in the Buddhist religion?

    hmm..chestnuts, napa cabbage, vegetarian oyster sauce, mushrooms (i prefer king oyster)
    do you make your own dough too? now that would be ambitious! :]

    i never knew Buddha didn’t like onions.

    hhmmm. I don’t have any recipes, maybe my mum does.but i think you should create your own dumpling for your mum with ingredients she love. mamma dumplings so she’ll feel extra special.

    I’ve made vegetarian dumplings with a somewhat modified egg roll filling, which turned out pretty well. Just use some firm tofu, cabbage, vermicelli, grated carrots, shiitake mushrooms, soy sauce, salt, pepper.

    ehh sooo weird. we made some the other day for this friend in class. everytime a bunch of my friends go to eat, she ends up eating at home. so we felt bad…soo we made this.

    @mindfood - if I knew, I would be buying them too! The original reason why I keep making dumplings from scratch is because I don’t ever know what they’re putting in the frozen ones. Bad cuts of meat, MSG…

    @dupe_1 - If I find the right recipe, I most definitely will try and make my own dough! (but will buy pre-made packs just in case…) The best ones are kneaded with milk.

    hmm..i go with turkey these days..ground beef is scary ;)
    haha wow..you have wayyy too much free time if you have time to make your own dough!
    -but it’s always a pleasure to see your crazy, length preparations :]
    +”fun see” is always good..not really rice vermicelli but similar..like for jai and such~

    id go with rice, green peas, shitake mushrooms, maybe some soft cooked carrots, or maybe some chopped up celery to add some crunchiness. no egg? then how will u make the dumpling hold itself together? and isnt there egg mixed into the flour?
    O.o

    Try add some glutinous rice into the texture together with some chinese mushrooms  plus chopped spring onion.. something different but great texture. well, the rice and the mushroom combination should be half half tho!

    shiitake mushrooms, garlic chives, water spinach, water chesnuts
    garlic, ginger, white pepper
    oyster sauce, s/s, rice wine

    i’ve had it with bok choy. i dunno about the meat part cuz i usually eat it with meat and don’t make it myself since i can buy them cheap and already homemade. however one thing i’d really really like to make that i can’t make myself is chinese dessert! i have no idea how to make a lot of them except the gelatin ones. share recipes if you have some!
