2am call for soup

I got home from work at around 2am last night, and really felt like a warm chinese soup after a 16 hour day… without a lot of sleep in the past week. I’ve been getting flu like symptoms all week and I really wanted to get better before I fly to HK on Tuesday. Anyway, like a true maniac, I started chopping vegetables in the middle of the night. I brought the pork bones to a boil, discarded the impurities, and combined all the ingredients in the pot. Bring to a boil, then switched the stove to the lowest setting possible. I left it on while I slept (I know, it’s dangerous… but it was fine) and woke up with beautiful soup this morning.

Hairy Cucumber (節瓜) and White Turnip Soup

1 Hairy Cucumber
1 Chinese white turnip
8 dried scallops
3 dried figs
4 dried chestnuts
1/4 Leek
Handful of skinned almonds
1 corn, halved
1/2 cup Cloud ear fungus
1/2 kg Pork bone
Handful of chinese roots which I can’t describe at the moment

Hairy cucumber is known to be rich in potassium, beta-carotene, calcium, phosphorus, iron, vitamin C and AB. It is a great diuretic and has slimming properties.
Chinese white turnips are low in calories and high in nutrients – and like allcruciferous vegetables, loaded with cancer-fighting phytochemicals. Double score! (pics to come later)

    wah~~ superwoman indeed! sounds very “ching yeet” too :) … but hairy cucumber (lol @ the eng name)… not sure if that’s good if you have a cough, but if you can eat it without worsening or getting a cough, go for it! j/w where i can meet someone like you in US now haha… you’re so well-rounded that it’s almost unimaginable, for real… and no matter how stressful work gets, gotta take care of your health~~

    hairy cucumber is really delicous. i leave the chinese soups to my mom and grandma :)
